Broccoli rice arancini balls

Ingredients:

1 broccoli processed into rice with a blender, food processor or grated

2 eggs whisked

1/2 cup almond meal or other nut flour (I used sesame flour)

1 tbsp ghee

spices of choice, I used 1 tsp turmeric and salt

Method:

Preheat oven at 180 degrees celcius. Mix all ingredients with a fork or your hands. Create small balls and cover in almond meal or other nut flour. I used sesame meal too. Bake until golden brown, about 30'. 

 

So excited to share this incredibly easy recipe that is so satisfying. You can name them arancini balls or add some cumin and call them falafel! who cares? Here I serve them with zummus, aka, zucchini hummus, for a happy gut. Will post the recipe for this soon!
